The ability of carrageenan gummies to maintain their shape under high-temperature conditions stems from carrageenan’s intrinsic gel-forming properties and a well-balanced formulation.
Carrageenan is a hydrophilic colloid that forms a stable three-dimensional network in water, effectively locking in moisture. This gel structure exhibits thermoreversible stability, remaining intact at room temperature and even at elevated temperatures, and does not soften or deform as readily as conventional sucrose-based candies.
At the same time, white granulated sugar, glucose syrup, and other ingredients are added during production to increase the solid content of the system, reduce water activity, and minimize the likelihood of gummy candies softening and melting due to excessive moisture. A well-balanced sugar-to-acid ratio can further enhance gel strength, resulting in a more compact and cohesive overall structure.
Compared with gelatin-based gummies, carrageenan-based gels exhibit superior heat resistance: gelatin tends to soften at temperatures close to body temperature, whereas carrageenan gummies maintain a delightfully chewy, springy texture even at room temperature during the summer, without becoming sticky, runny, or losing their shape.
In addition, the drying process following shaping creates a relatively dry surface layer on the gummy candies, which reduces sticking and enhances overall thermal stability. The combined effect of these multiple factors ensures that carrageenan-based gummies maintain good shape and texture even during the summer months.
