Gummy candy production centers on colloids, sugar, and water, and is completed through boiling, shaping, and cooling to set the final form, with a stable and controllable overall process:
Prepare the ingredients and sol by proportionally measuring granulated sugar, glucose syrup, gelatin/pectin/carrageenan and other gelling agents, water, and flavoring additives. First, thoroughly soak and swell the gelling agents in warm water to prevent clumping and ensure a uniform texture in the final product.
Cooking the syrup: Heat and boil the sugar and water, stirring until completely dissolved, then add glucose syrup. Continue boiling until the desired concentration is reached, evaporating excess moisture to achieve a viscous consistency suitable for shaping.
After turning off the heat and allowing the mixed formulation to cool, add the fully swollen hydrocolloid and stir until completely incorporated. Then add fruit acids, food-grade flavorings, colorants, and other ingredients, and mix thoroughly to form a smooth, fine sugar paste.
Pouring and molding involves pouring the sugar paste into starch molds, silicone molds, or specialized molds, gently tapping the mold to smooth the surface and release trapped air bubbles, thereby ensuring a uniform shape for the soft candies.
Allow the sugar paste to cool and set at room temperature or in a cool environment, letting it gradually solidify, lose its fluidity, and develop a chewy, springy texture. Then carefully remove the gummies from the molds.
For subsequent processing, sprinkle a thin layer of granulated sugar or starch on the surface as needed to prevent sticking. After a brief screening and sorting, the finished soft candies are ready.
